Chicken Posole Recipe

After a great thanksgiving meal. We toned it down tonight with a family favorite.
Here is a great fast recipe. Hope you will try it out.

Hands-on time: 10min
total time: 30 min) serves 4

1 Tbl Olive oil
1onion, thinly sliced
Kosher Salt and black pepper
1 32oz container low-sodium chicken broth
1 28oz can diced tomatoes, drained
1/4 tea, crushed red pepper
2 cups shredded rotisserie chicken meat
1 15oz can hominy, rinsed
1lime, cut into wedges

>Heat the oil in a large saucepan
over medium heat. Add onion and 1/4 tea salt & pepper and cook, stirring occasionally until soft and beginning to brown, 10 to 12 min.

Add the broth, tomatoes, and red pepper bring to a boil. Stir in the chicken and hominy and simmer until heated through, 3 to 4 min. Serve with the lime.

optional > Add a second can of hominy. And squeeze the lime in your bowl.
Serve with french bread.

Method Mom!

Lately we have had to find a way to keep Micah in his room during his nap. Previously we used the plastic "Safety First" door covers. We have misplaced those in the move and had to come up with an alternative. We could have bought new ones but I am not like most mothers who like to safety lock everything in the house. Even though at times I think why didn't I just get a stupid lock.? Like on my bedroom door....... Well  Ryan and I have discovered that if we just lock the door, Micah does not unlock it. He has several times so I know that he knows how, but for some reason he won't during his nap time.











As much as this has been a simple method to keeping my 2 year old in his room during nap time. It has been a real cramp in my daily doings around the house. My  husband has decided that locking all the doors that we don't want him roaming in is a good idea. I thought "This could be good". Little did I know that my husband would remember every time he walks out of our room and also bathroom he would be locking the door.

 Lucky as we are, the south makes it way to easy to break in. We have placed a penny at the top of each of our upstairs rooms. Including our bathroom that is located in our master.
This morning as I was running up the stairs to grab something from the bathroom. I was stopped by the locked door then as I entered our room I noticed that the bathroom was locked as well. "WOW THOROUGH" Dangit...... While I was trying to find some loose change to unlock the door to the bathroom I was thinking that we are going to have to find another method or hurry little Micah out of this stage.< Or I could just surrender my pride and buy those locks.<<<Nahhh

Decades! the 70's

Church is never boring in the south! We just kicked off a Decades sermon series. This week everyone was dressed up like a hippie or something of that sort. Ryan had on some shoes that he grabbed out of a box that said (pimping Gangster) They were the coolest.... Let me tell ya. They had lion stripes air brushed on them. "Classic" The band preformed a montage of some tunes from the 70's including (Sweet Home Alabama, Jeremiah Was A Bull Frog, Its Along Way To The Top, and also American Pie.) It was something! The girls were snapping there fingers to the beat and adding little movements here and there. What guts I tell ya.< I am such a chicken I was just loving watching.

Matt (John Travolta) did a great Job with the message. He talked about Erosion of authority. It was really cool how he connected it to the decade then also talked about how this generation is one of rebellion. It is really interesting to see how the generations that we have grown up in influences us in such a huge way. I think that it is safe to say that most of us struggle with Authority and also being rebellious. I feel like an idiot saying that I have Rebellion problems, mostly because I am an adult. Since I am an adult I should have learned all the lessons of making simple mistakes and I should not have any problems submitting my will for the greater good. To bad that is so not true. Learning how to obey is a life long lesson, 26 years and I am in full swing. If I could put it into my own words what I would like to obtain. It would be obedience and knowledge and with that wisdom! I love the word Wisdom. This is not including all the other millions of things I want to gain in just one life. I know that God has got some great things for me. I know because he has brought me this far and that is FAR! I also know because I am saved by his grace I have been able to do so much more in my life that I would never have done without the freedom I have in him. <More to come on the decades. Next week is the 80's can't wait!

Merry "Cheap Tree" Christmas!

Growing up my family didn't celebrate the season with a christmas tree so we don't have tons or ornaments from a million years ago. Since my husband and I got married we have been decorating a hand me down tree. We enjoyed that tree up until last spring when our shed flooded and took the tree with it.
 For the past few years all the Wallace girls take a trip to a small town a few miles from our family farm. We usually check out what the sales are going to be the night before then we are on our way in the freezing dark before any of our Children or husbands are awake.
Last years "Black Friday" I had my BF go to the Lowe's and get a door buster! She was one of the first people there and got me that beautiful christmas tree that I had my mind set on. It was only $15, Regular price was $100, I was so excited. Well we sat that thing up last year and, what do you know that was the scraggliest tree I had ever seen. I had to add some garland to the center to make it more real.

Every year we go the day after christmas to get the best deal on all the Target goodies! I really enjoy this because I just started getting the boys a special ornament. This year the boys both had a special one. Kenan had a deep sea diving bumble bee and Micah had a snow skiing Hipo!

This year since we moved the end of October we decided to celebrate the seasons early. The boys and I went to get more Garland and lights to add to our "Beautiful" scraggly christmas tree and kenan also added his ornament to the list. He came home with a dino that is blue with purple claws. I didn't post a picture yet because the claws were broken on the way home in the bag and then Kenan was trying to cut the tag off and broke the head off. Ohhhhhhh Boy we have had fun:) Oh well Its just an ornament that we will BE glued together for another 20YEARS. Kenan won't mind but his woman might when he is trying to hang it on his Christmas tree someday. We love the holiday seasons.< Oh Ryan is the one who helps the boys hang all the ornaments on the tree. Just like his daddy!

"Sweets" and taking our kids on a good date night.

We went to Savannah Sweets to get some salt water taffy. Then we walked river street and found a place to sit and watch the night cruses take off. It was really fun. The boys loved it.  Its still very unreal that we live in this city.

Kenan and his latest discovery!

Kenan and I were making our breakfast this morning when he went on to tell me that he had a good dream....... He said that he had a dream about his nipples. U- huh was all I could say."And what about them"? He told me that in his dream they grew bigger. U-HUH..... "Like a girl"? No like a big boy. "Ok like daddy"? No like smaller then that.  You see Kenan has been talking about all kinds of body parts, but for some reason the past two weeks he has been telling me that his freckles are nipples. But in this particular conversation he was sure about what was the correct body part and that they grew. I ask myself have I over done it with redirecting the questions he asks????? Nah he's 4, birds and the bee's is coming sooner then I thought.

Cell phone Trashing!!

Have you ever wanted to throw your cell phone out the window when it didn't do what you wanted? "Its traveling to outer space give it a second" that is the phrase that goes through my head every time I catch myself slamming my fingers on the same button a million times to get it to obey. I remember when I had my first cell phone it NEVER had problems. Or it was just the pure fact that I had one and not many people did, or so I thought.

I gotta tell you I started out with Cricket service. The service that you can only drive from one end of town to the next and then all the sudden there is nothing. Yeah that was awesome!!! It was the mecca of cheap when I was 17. I think I paid $49 bucks a month and had unlimited service. My phone was not so big but the batterie was as big as a car batterie. And you could buy just about any colored cover that plastic made.

My second phone was from cingular. Oh boy that was one crappy service company. And my phone looked like a UFO. But still then I don't remember having as many problems even then. I even went to pay my bill at the store at that time. That was before online bill paying.

My most recent phones have been mainly from T-moble but also from the "Instant Phones Section" At wal-mart. You see I have never thrown my phone out the window but I would like to at times.
 I just seem to break them and have to buy new ones.

So if the cell service is getting better then why in the world are they making these computers with a complete glass front that you can put in your pocket?! I still don't get why they are not making these things water proof! I need all this in one Plastic, waterproof and long lasting. I know it sounds like a piece of tupperware but it just might be a must, here in the near future!

Yesterday I entered a giveaway for something from my friends new line. It is such a grown up thing. Meg I am so proud of you and your man.

Moving in!

This week we have been moving into a rental. I am excited because all the walls are white and everything was cleaned first:) I am a stickler about living in other people germs. So I took on the house with some Clorox wipes.
Today micah fell down all the stairs!!!! Poor guy hit like every one of them with his face. I was there from him when he hit the bottom. He looked up at me and had about 50 animal hairs on his lips... YUK!  Guess I will have to hit the stairs later tonight.

Micah had a special day with momma. We went to the Piggly Wiggly and got us a little glass bottle of cola and brought it home. I grabbed a little kid chair and sat it in the kitchen. And you bet, that boy spilled almost that entire bottle. I had the while kitchen moped by the time he was done with that little 8oz cola. Note to self. Don't do that again. Or if I do I will be dragging that kid chair out back.
